I'd use coconut oil. The phenols in olive oil are damaged by heat. – Forrest May 2 2011 at 20:09

Only 2 minutes for someone to recomend coconut instead of olive oil :) – Matt May 2 2011 at 20:23
thanks for the tip. I'll try this instead of bananas in coconut milk yogurt next time. – Kathi May 2 2011 at 21:05
I did plantain in coconut oil not too long ago. It was overpoweringly sweet. Tasty, but too sweet for me. – Dave S. May 2 2011 at 22:08

add some potent un-ground celtic sea salt for an awesome counterpoint to all the sweet going on – JoeBranca at paleoplusone.com May 2 2011 at 23:43

I like to make bacon, fry up banana and apple slices in the bacon grease, and then throw it all together with some cinnamon.

It's even better if you do it with coconut oil and dust it with cinnamon. Mmm... I might try slicing the bananas and putting them in the freezer ahead of time to help them hold their consistency a bit better.

the sweet plantains (black skin) fry up nicely in ghee and then top with whipped coconut milk....heaven! or you can bake them skin on in the oven then top with whipped coconut milk and melted butter...

Plantain bananas (Platanos in Spanish) and regular bananas cook very nicely in coconut oil and/or ghee. Personally, I like to use one spoonful of each for a nice mix for multiple reasons. The coconut oil provides amazing flavor and MCTs. The ghee provides the pasture butter nutrients (which I won't get into here) and ghee also splatters less. I have found that using half ghee splatters less than using 100% coconut oil. Since ghee and coconut oil are both nutritious and equally delicious, using one or the other can work very well too. Either way, fried bananas are a yummy treat. You can dust it with cinnamon or whatever, but seriously the flavor is so good as is that you really don't need anything else.

I just wouldn't recommend doing this too often, since bananas are fairly high in sugar. But if you're gonna choose a dessert anyway... I'd say fried bananas are a much better choice than a piece of cheesecake or a bowl of ice cream or a treat from the starbucks glass counter.

Another vote here for pan-frying your bananas in coconut oil. Try drizzling them with a tiny bit of raw honey...yum, YUM.

Oh yea... try it with apples too... it's like crack. I fry so much now I've embraced my inner 50's housewife by wearing an apron.

I did it with coconut oil as well and it came out similar to fried plantains. Was awesome, but did not crisp up at all.

My toddler appreciates this post. I, however, cannot stand the taste of bananas. Keep the recipes coming!

I've done it with plantains and coconut oil. They got crispy, no problem. I had them sprinkled with a little salt. Delicious but addicting!

Frying the green plantains is also a good thing. They are called "tostones" in Spanish and they are savory and less sugary than the ripe plantain. I like to fry the plantains and then toss them in a bit of sea salt and lemon/lime juice to coat (not alot). You can go ahead and eat them with your veggies and meat for a meal. Just do a search for Tostones on google and see the images. It doesn't hurt that sometimes, here in Miami, Plantains are like 10 for a dollar, you can always cut them up in rounds, unskin them and then freeze them until you want to use, also can be done with the ripe ones. This way, you can save some money as well.
