I bought "Let's Do Organic" brand unsweetened shredded coconut and now I don't know what to do with it. I've searched some, and all I can seem to find is baking recipes, paleo and regular SAD. I know people put it in smoothies, and I plan to try that- but other than baking fake cookies etc what else can I do with it? I can't eat it straight.

When I first bought unsweetened coconut flakes I had a hard time just eating them straight too, but I got used to it and I love them now as a snack! They also go really well with dark chocolate. |

Sprinkle it in with a baked sweet potato, add a few walnuts. Yum! Or sometimes I take some fresh blueberries, a few natural almonds and sprinkle some unsweetened coconut on it. Nice "treat." |

You can make a burger with coconut bun. Just mix an egg with some coconut (varying amounts depending on how dense you want the bun) and fry in ghee.

I use it for sopping up juice and fat from the skillet (a job previously handled by bread), then I dump the flakes onto the dish. Or I use it just as a sprinkle topping on anything. Because it's unsweetened, it can be used in plenty of savory dishes. |

Take a ripe banana, heavy cream or coconut milk, 2 eggs, make batter, add coconut flour (2 tbsp) & almond flour (2 tbps) and shredded coconut (enough to make consistency), and now make pancakes by frying the lot in butter or coconut oil. Coconut banana fritters! Good with greens, eggs, etc., for breakfast. I snack on the unsweetened flakes all the time. Yummy. |

My go-to "dessert" is 3 tablespoons of coconut flakes and 1 tablespoon of 100% cocoa powder with maybe a little cinnamon. It's super dry and takes a little getting used to but I really love it. Great way to get in some chocolate flavor with zero sugar. |

Use it to bread chicken, fish, or shrimp, put it in your salad, or put it on a fruit salad. If you eat strawberries and dark chocolate melt some chocolate, dip the strawberries and immediately sprinkle with the coconut. Probably not an every day treat but dang it is good. |

very nice on top of fish with a little (or a lot of) curry spice. I get trout fillets here (I'd prefer whole fish but not really an option) and pan fry them gently in a LOT of butter with some coconut flakes and thai curry spice on top. http://www.thespicehouse.com/spices/thai-nam-prik-krung-kaeng-ped-red-curry-powder As the fish is cooking I tilt the pan and spoon the hot butter constantly again and again over the top of the fish (and the coconut) and do this until the fish is cooked to your liking. Don't flip the fish, and if it has skin on one side, cook it with the skin side down. Pretty tasty. |

i use it to make a flax/coconut pancake if i'm in the mood for that on a saturday. i don't measure so i can't really post the recipe but it is really really good. |

I use it in everything... great also for 'vegetable-pizza-crust': Use a mix of cauliflower/broccoli/carrots, microwave until soft, then blend in food processor until rice-like consistency. Add eggs, shredded coconut, a bit of coconut oil and whatever spices/salt/pepper you like. Flatten on a baking sheet (I use parchment paper to prevent sticking), put in the oven for about 15 minutes at 400 degrees - time depends on thickness of your crust - and presto, you've got yourself a VERY healthy pizza crust! Now all that's left is the pizza toppings... again, use whatever you like and put it back in the oven for another 10 minutes or so... mmmmhh!! My whole family loves this - and none of them would actually even think about eating cauliflower and or broccoli otherwise... ;-) |

breakfast bars: 1 dozen eggs, 2 c coconut, 1/4 c honey, healthy scoop of cinnamon. bake on parchment until eggs are set. cut em up and put into single serving size containers in the freezer for superfast breakfasts or food emergencies... |

Everyone has such great ideas! Here are a few more: whole banana, stick, melted dark chocolate - I get the 70% Guanaja Feves from Valrhona at Whole foods, coconut, freezer. ChocoBanana! The other is the same deal but slice the banana thick, dip and roll in the coconut, freeze, and you'll have bite sized treats! The little bites are pretty adorable and way tasty. You know.. if the shreds don't taste like coconut to you then I would just use as an addition to your cooking as an extra boost of lauric acid intake. You can also make curries, chutneys - use to top chicken, pork and fish, ceviche, etc. Have fun! |

I'm sure there's some paleo macaroon recipes, right? http://paleoblocks.blogspot.com/2010/04/paleo-recipe-macaroons.html I'm sure you could do something with cocoa powder and vanilla extract too to make them chocolate...which is what I think I'll do this weekend. Otherwise, I like to mix the flakes in a bowl with some macadamia and/or dark chocolate chips, makes a nice dessert if I'm in the mood. |

I add it to the ice cream recipe I nabbed from health-bent.com - 3 frozen bananas, 1/2 c canned coconut milk, splash of vanilla, processed until smooth; I just shake some flakes in and stir. So good! |

My son is addicted to berries with the shredded coconut on top. He also had the coconut flakes this AM on an apple with a few chocolate chips (gluten free ones). I am in search of a good protein ball that has coconut in it. I know there is one out there, I just haven't had time to look! |
