I did, up until this evening.
Here's a 1-minute hack for awesome ice-cream:
The berries are cold enough to basically make instant ice-cream. The last few berries at the end add just a little more chill, as well as berry chunks to make it interesting. Yoghurt would also work well instead of cream, or perhaps a mix.
The idea came from seeing Jamie Oliver do basically the same thing some time ago. Heston Blumenthal has a similar version, for ingredients that don't freeze well, using dry ice, but that's not something most of us tend to have handy - the CO2 sublimates away leaving just cold. Don't ask me why it popped back in my head today.
It's for eating straight away.. I expect it would freeze solid if you try and keep it like regular ice-cream, but we didn't get the chance to find out :)
So, for the sake of a concrete question: what variations can you suggest?
It sounds like you could do it with lots of frozen fruits. I'd be most interested in using frozen peaches.
You can make a somewhat primal (excepting the dark chocolate) chunky monkey by processing plain frozen bananas into an "ice cream" and mixing in some walnuts and a little bit of dark chocolate chunks.
There is a Raw Vegan (i know, i know) Ice cream called Tomberlies that is made mostly with cashews, fruit and raw coconut. but it does have agave syrup. not much, but that's still not strict paleo.
have you seen the new coconut manna? if you blended that with seasonal fruit and regular coconut I bet you could wind up with something even Robb Wolf might approve of
I "discovered" something of that kind for myself as well. I leave frozen berries in a bowl for a while to naturally thaw them. Then roughly squeeze them with a fork to release juice but keep the texture. I add either sweet cream, sour cream or cottage cheese with cream (cottage cheese only is bleh). It's a delicious dessert!
