My company is considering offering a paleo foodservice to local cross fit gyms in our area. What type of meals would you want to purchase and what price range would you be willing to pay?

I think your best bet is to actual poll the people at the Crossfit's you are hoping to service. There are so many different versions of Paleo. I would make up a few menus send them over to gauge interest.

Personally as someone that precooks my week's meals for myself and a friend or two occasionally, things that store/reheat well are egg dishes, like egg muffins and crustless quiche and ground beef dishes like mini meatloaves, stuffed peppers and soups/stews made with just about anything.

Real pemmican. A single-serving chunk in the vicinity of $3-5 would probably go over well. Larger packages might sell for $15-20.

right? good luck trying to find veal bones most places... total upvote. – tartare May 8 2011 at 16:09
This country veal bones are pretty much impossible to find. I bought them only once in my life! :) Stock making takes some time and i would always use veal bones if i could get my hands on them. Would make all the time for cooking more worthwhile. – Jan May 9 2011 at 8:48

I'd be willing to pay 5-10$ per pre-made meal, depending on serving size and complexity...and I'd be happy with any grass-fed meat + side of veggies.

Just 2c, I think your target market will be disproportionately male, and I think a big selling point for them is simply assembling the meals, beyond the convenience of cooking. So full meals, including uncooked ingredients (apples, say). Grass-fed, veggies and a fruit would be nice, you'd want to balance for nutrients. No idea on prices, surely you've checked competitors (Weight Watchers, etc).

I'd eat any paleo-friendly frozen meal so long as it tasted good and was readily available to me :)

and of course if it was a good price!
