Jerky and a nut mix (include some coconut flakes and dried fruit) would be a good start.
You can actually get some different egg mixtures in freeze dried form (eggs and bacon sort of thing). Not always the perfect ingredients, but great in a pinch.
Pemmican is always a popular one mentioned on forums, but never made it myself.
I have used lara bars, bumble bars, and a couple others for intense hiking days. Fish in packets is another possibility.
You can pack some more perishable items for the first day and probably get away with it....hard boiled eggs, sliced veggies, precooked meats or deli meats, cooked bacon.
There are some freeze dried meals that you can get that are 'kinda' paleo if you eat potatoes, they also make some meals that are for tortilla wraps, you just don't have to include the wrap. The main problem with most of those meals is the added preservatives and sometimes MSG in the ingredients. The more natural ones without MSG tend to lean on the vegetarian side....although you might be able to find a workable one.
