Here in NZ, we call these butternut.what is?

And what do I do with it? I possibly shouldn't have just bought it when at the supermarket without looking at what I can do with it first :P

hey, not many do or know this but butternut squash skin is completely edible, too. Most squashs' skins are not but that one indeed is. Bake as everyone says below but remember you can eat the skin, too. – ben61820 May 14 2011 at 12:48

Bake the butternut squash in the oven about an hour at 375 or to the point when inserting a knife it slides in easily. Open up, keep the seeds, and eat the flesh with copious amounts of delicious grass fed butter. Spread the seeds out on a cookie sheet and bake til crisp. Add a little salt, voila a great chewey snack.

Or take the flesh and cut up into small pieces and cook in a deep pot with water. Then smash and make into squash soup. Delicious. Lots of squash recipes on the internet with various spices.

ok, baking it in the oven and dousing it in butter sounds fantastic. I'm fairly certain that all the butter available here in New Zealand is grass-fed as well (see the question I asked right after this one). – haakuturi May 14 2011 at 2:39

Yep. Butternut squash.

Cut in half lengthwise and roast in the oven or steam by putting it in a pan with some water and cook in the oven, covered. Google it and you'll come up with videos on how to do it.

In addition to the other uses mentioned, you can peel and slice it into half-inch-think rounds and fry it in lard or butter. My mom also uses them for pumpkin pie (not at all paleo) because by the time she adds the pumpkin pie spices and sugar, it tastes just the same, and butternut squash are easier to work with and less watery than actual pumpkin. So I'm guessing they'd be good in any pumpkin-based paleo recipe.

Yes, butternut squash! Bake or boil it (look up techniques online). My favorite uses for the pureed flesh is soup or in coconut curries.

I like to cut them in pieces and boil them along with a yam or sweet potato, then peel the skins off and mash them all together with lots of grass-fed butter,

Sometimes I bake mine with cinnamon, sometimes with smoked paprika, sometimes with both. I eat a lot of butternut and love it. I use it as a staple PWO carb source with my breakfast.
