Hi all! any ideas on how to make a coconut creme choco dessert?I would love a pudding consistency!

Well the easiest is a ganche, just melt dark chocolate (I like Green and Black 85%) in the cream. In this case it works pretty much like dairy. You just mix the chocolate and the cream until it is all smooth and shiny. On the other hand ganache is too rich to just eat, it is more something to use as a dip for strawberries. I would use a custard recipe and just replace the cream with coconut cream, you might have to play a little since coconut cream is a little watery and likely to separate sometimes and then add chocolate. The good thing is that a custard that doesn't set is a pudding, and one that does is a custard so either way you win! |

I've been mixing coconut milk, cocoa, ground flax seeds, cinnamon and shredded coconut together to form a sort of choclate-y yoghurty thing. A /tiny/ bit of coconut flour if you want a thicker consistency. Not the most haute-cuisine snack out there, but itwWorks for me. :) |

I adapted this recipe, just remove the biscuits, add more nuts to your liking (if you have merenges great, but I dont), I add some coconut, coconut cream concentrate, dates to sweeten, protein powder. I freeze it in plastic in a bread pan, when its cold I take it out and pound it on each side to make it more condensed, put back to freeze a bit longer, then i slice it up and wrap each individually to take on the run.
