I have not eaten gluten in close to 10 months, however, I am traveling to Phoenix next week and there is a pizza joint that has some of the best pizza I have ever put in my mouth. Now since I am not celiac I plan to indulge and enjoy myself. I am gluten intolerant however and tend to have some IBS symptoms for several days after consumption, and that was 10 months ago so no sure if it would be better or worse. Its not debilitating just slightly uncomfortable. My cost/benefit analysis tells me it's worth it...lol. Anyway, do any of you do anything to reduce the effects of gluten? I was planning on consuming quit a bit of homemade chicken broth before and after as well as plenty of digestive enzymes. Any thoughts on that as well.

Put the toppings from two slices on the crust of one slice. Eat very slowly. Enjoy every bite. Stop before you really want to. Double down on the proteases.

Prepare to feel like crap for three days following your pizza adventure!!!!!!!!!!

The reaction/hangover seems to be more severe the longer you are gluten free.

I only did it once about 2.5 years ago...three days for me. I posted a while ago that I was driving past a pizza joint and they were unloading 50 sacks of "gluten enhanced pizza flour" It is just not flour, it is has more gluten in it...so the pizza maker can throw it up in the air and spin it flat. Probably just incremental re-introduction of gluten foods in the few days leading up to your gut apocalypse.

The pizza joint may have a gluten free crust option (some do). The crust is pretty much the only bad-for-you part of pizza, and its not even the best part.

The crust is part of what makes it so good...lol. Growing up with a father who owned a pizza joint, it's hard to eat pizza without a good crust. – hemanvt May 21 2011 at 0:16

Could be placebo or bs, but I've always found that enzyme pills such as Gluten Defense help a bit when I accidentally get a bit of gluten (I'm a celiac). Throw back some ginger and just prepare to feel like crap!

Just a quick update....lesson learned, no pizza is worth the aftermath of gluten consumption!

My old IBS symptoms of incomplete evacuation which cause multiple uncomfortable bowel movements during the day. Hopefully it will go away in a couple days. I am hitting the Kvass and Chicken broth pretty hard but at least I learned my lesson!!! – hemanvt May 28 2011 at 16:50
