I have not eaten gluten in close to 10 months, however, I am traveling to Phoenix next week and there is a pizza joint that has some of the best pizza I have ever put in my mouth. Now since I am not celiac I plan to indulge and enjoy myself. I am gluten intolerant however and tend to have some IBS symptoms for several days after consumption, and that was 10 months ago so no sure if it would be better or worse. Its not debilitating just slightly uncomfortable. My cost/benefit analysis tells me it's worth it...lol. Anyway, do any of you do anything to reduce the effects of gluten? I was planning on consuming quit a bit of homemade chicken broth before and after as well as plenty of digestive enzymes. Any thoughts on that as well.

Put the toppings from two slices on the crust of one slice. Eat very slowly. Enjoy every bite. Stop before you really want to. Double down on the proteases. |

Prepare to feel like crap for three days following your pizza adventure!!!!!!!!!! The reaction/hangover seems to be more severe the longer you are gluten free. |

The pizza joint may have a gluten free crust option (some do). The crust is pretty much the only bad-for-you part of pizza, and its not even the best part. |

Could be placebo or bs, but I've always found that enzyme pills such as Gluten Defense help a bit when I accidentally get a bit of gluten (I'm a celiac). Throw back some ginger and just prepare to feel like crap! |
