I love coconut in any form, so I am particularly devastated by the realization this week that I may have become allergic to coconut (mucus production in my throat and copious annoying throat clearing...a similar rx to when I now have gluten).
I have eliminated coconut for the last 4-5 days and the mucus production after meals is only just starting to settle...does anyone have any suggestions on how long to eliminate coconut before I reintroduce in order to test the theory?
And also any thoughts on how long before the symptoms should clear? I would have expected them to have gone by now and am fingers crossed that this means it may not be the coconut xx
...I have also around the same time discovered that my iron supplement contained gluten and have in the last couple of days sourced one that does not contain gluten... So unfortunately I have 2 different rx experiments going on simultaneously!
And last one, it is not strictly speaking paleo because I add a bit of honey and some dates/goji berries...but I make my own chocolate with cacao powder, nibs, desicated coconut and...coconut oil (part of the reason for my devastation over a potential allergy!)
I have just made a batch with ghee instead (it is sitting in the freezer ready to go so I haven't tried it yet) does anyone have any other suggestions for possible coconut oil substitutes in this kind of recipe?
