I put it all in a bowl and mixed it with the back of a spoon. It was nice and bitter, a little sweet and creamy and salty.
My girlfriend thinks I'm nuts. But it was SO good!
How do I tell her that I'm not killing myself with the butter? Other people are starting to get worried about the amount of cholesterol they think I'm eating.
Also, I'm thinking about making a big batch and putting it in some little square molds or fancy ice cube trays and setting it in the freezer. MMmmmm...chocolate butter!
I make that for a work snack on third shift(we don't get real breaks or lunches,and sometimes you just have to quickly eat something in between customers).Melt it all together,freeze on wax paper.Sometimes I put tahini on it, too.
I'm a little confused by this question.
Firstly "paleo" is a vast term therefore stucking some put into a certain frame might be counterproductive.
Secondly, if you are worried about cholesterol, here are all the PaleoHacks threads tagged "cholesterol".
And don't try to convert people to paleo by words/studies/etc. Lead by example. "Eat good, look good, feel good"*. People will/may follow but in any case I presume it will beat any meta analysis on "insert contraversial nutrition topic".
My wife and I do variations on this all the time. We mostly use coconut oil as the fat though instead of butter. Also, I like to add carob sometimes, and I've found that the carob is so much less bitter than cocoa that I don't even need honey. Ergo making the carob variant just that much lower in carbs. As far as calling it "paleo," or not--I don't worry about that because I'm more into pleasing my body's natural needs than catering to my brain's sense of historical aesthetic.
