I am getting ready to take a after work class. As a result I will have to bring dinner with me. I have been using dinner leftovers as lunch and I can keep that up for the others dinner.

I am thinking I will bring one bag of greens and another container with meat and veggies and stuff in a dressing/marinade that I will dump on top.

Other then a greek salad with roasted peppers, olives, feta, lemon juice, oil what would you pack?

I just ate steak salad for the last 2 days. Honey mustard dressing (I buy it from Chili's restaurant - no soy, no dairy - don't know what's in it but it doesn't make me sick and it is YUM).

I used: - Hydroponic Bibb Lettuce - Chopped white onion - Strawberries & Fresh Pineapple Diced - Chopped cilantro

  • Mix together well with your hands and top with thinly sliced cold grilled steak. I sprinkled my steak with lots of seasoning (cumin, garlic salt, steak seasoning [no MSG or additives]) before I grilled it so that it would have a lot flavor on top of the salad.

Salads are some of my favorite meals... so versatile! Hard boiled eggs and an easy-open can of tuna come to mind. Any meat is good cold, I find. :) Roast pork, chicken... you name it. Be creative! Throw in some endive, some horseradish or regular radish for a little kick. Or, little bits of fruit or berries.

I also love the combination of asparagus and grapefruit.

My favorite salad lately has been mixed greens, beets, goat cheese, artichoke hearts, avocado and some variation on this dressing (i add tons of garlic and don't measure anything) topped with a protein leftover--most recently flounder baked in sour cream and horseradish.

My fave salad combo is some chicken, bacon, avocado & boiled egg. For dressing I just do a little cider vinegar or lemon juice, olive oil, dijon mustard, and a little honey.
