This is a very good overview on resources on foraging wild edible plants.

Do you have other resources, texts links you like to share?

Thanks for this question! This is an area I'd like to think more about this year. I live in OR, so the possibilities are endless. – Karen P. Jan 23 2012 at 0:46

In greater Portland and Pac. NW, John Kallas is a remarkable resource.

Another good resource for those in the PNW: earthwallnorthwest.com. Karen Sherwood holds wild food dinners and teaches overnight classes and a nine month apprenticeship on this subject. I've done that apprenticeship, and I'd recommend it to anyone in that area who's interested in eating wild plants. – rook May 27 2011 at 12:19

I'm going to check out Russ Cohen's Edible Wild Plant/Mushroom walks and courses next year. I also got the Peterson Field Guide for Edible Wild Plants.
