This article suggest cows who life the whole year outside. I know there are some scotish breed who cope with that.

I don't know where you're from but in Holland we have: http://www.wildrundvlees.nl (wild beef).

And it's from exactly that: Schotse Hooglanders (Scottish Highlanders) or just: http://en.wikipedia.org/wiki/Highland_cattle

The organisation's primary goal is preservation of natural landscapes for which they need animals that graze. The surplus animals go to the butcher. Consumers can order once a month and always a minimum of 8 kilograms. Sweet deal.

Well to be honest: it's AWESOME! Taste is way better, but it's mostly the structure and the density of the meat in which you really really notice the animal has been <i>living</i>. – Sjoerd May 27 2011 at 22:02

In spite of our cold Idaho temperatures, our hardy angus cattle spend the whole year outside. Even in the winter they are out on pasture, although we supplement them with sweet-smelling green hay. This allows them to move freely, and to pick at dried forage as they desire. Lack of confinement also means healthier cattle as well.

My aunt and uncle have a farm in Montana and their cows are out year round unless one calves and weather is hellish, the newborn comes into their home to stay warm in front of the fire until it's safe for it to be outside. Same situation as @caryl - they move freely and eat the land supplemented by hay. That side of my family eat what they raise - cows, chickens, etc. and know what it takes to raise a good animal, they also hunt game.
