Today I threw together a chicken parmesan casserole dish for the kids I babysit. If it weren't for the breadcrumbs and soybean oil in the tomato sauce, it would've been fairly paleo (there is not one paleo thing or vegetable in their entire house!!) It got me thinking about making paleo casseroles. Probably simple enough? I did a search on here but no ones asked yet. So what are your favorite paleo acceptable casserole dishes? Or some ingredients that would work well?

I once made this Chicken Broccoli Cheese Bake. If someone else had made it, I would have sworn it had noodles in it. It was so freaking good. Perfect comfort food. |

I haven't seen casseroles but there are some great quick and easy recipes at www.everydaypaleo.com I've made several of the recipes and they all were fantastic. You could probably get ideas and make some things into casseroles if you wanted. |

A yummy dish I will throw together from time to time: saute up whatever veggies I have on hand(lately it would be sweet onions, garlic, asparagus, mushrooms, greens, maybe some broccoli), throw in whatever meat I have leftover(or brown some if I don't have leftovers)...lamb is particularly tasty...add a little bone broth, and some nutritional yeast to create a bit of sauce...put this concoction in a baking pan, and top with mashed cauliflower with an egg or two whisked in after it is too cool to cook the egg right away...bake at 350 until the top is starting to brown...yummmmm...I also like to saute a bunch of veggies with any kind of sausage in bacon fat, bake it all with enough eggs just to hold it together, and it's an easy crustless, dairy free quiche... |

my all time FAVORITE paleo casserole. Its a big hit with every single person (paleo or not) I've ever served it to. its soo yummy. I could eat it every day. Its called the paleo shrimp, bacon and sausage, squash casserole. I got it from Marks Daily Apple reader cookbook.
