Ok so my fiancee just had her bridal shower yesterday. I received a real nice deep fryer. Since I am the cook, I am excited but I know that being paleo, it must be used few and far between. What is the best oil for deep frying as far as having the least negative effects.

Beef tallow. You can buy a 5lb tub (or larger!) from US Wellness meats.

I agree - beef tallow has a higher percentage of saturated fat than lard, and is more stable at high temps. It's what I use for deep frying. – JansSushiBar Jun 7 2011 at 18:29
It's also what McDonald's used to cook their french fries in back years ago when they got their reputation for having the best ones going. Since they gave in to the conventional wisdom animal fat-phobes and switched to vegetable oil, the stuff is inedible now - bummer. – JCB Jun 7 2011 at 19:09
So the trans fats in the old mcdonalds fries is actually not bad for us? Paleo has changed the way I view fat but maybe I got it confused cause I thought trans fats were from bad oils – xtonedog Jun 7 2011 at 21:55
McDonalds USED to use tallow. They no longer do. They probably didn't change their tallow as often as they should, and it probably wasn't from healthy cows. So no, it wasn't the HEALTHIEST of stuff, but it wasn't quite the devil. (I know, I'm blaspheming). – Casey Jun 8 2011 at 12:36

Lard! And it makes everything extra tasty too. Just be sure to filter and skim between uses, store in the fridge and smell it before you use it.

@Oranges I am not sure what you are talking about exactly, but I have seen it used in things like a fry daddy. I am not sure why it would be different than other oils, it is just that you have to skim and strain it while it is still warm if you wanna keep the oil. – Vrimj Jun 7 2011 at 14:53

Oh yea, you can totally flavor the lard with bacon drippings. But I never use the fryers, I find I get better results pan frying, but it might just be because that is what I am used to :) – Vrimj Jun 7 2011 at 17:12
Flavor the lard with bacon drippings? Pfft. If I tried, I could easily accumulate enough bacon drippings to fill a fryer in maybe a month of weekends. Since I bake my bacon in the oven, it's really easy to empty the cooking sheet through a strainer and into my bacon grease container. you can also deep fry in coconut oil, though that may be expensive in the quantities you need.
