I want to cut back on my coconut milk consumption. I use about 1-1 1/2 cans a day (smoothie, curry). What non-dairy alternatives do you use that would work well in my smoothie and curries?

Pumpkin is wonderful too. It's not a fatty food but it adds delicious creaminess without a lot of calories if that's the reason you're cutting back on coconut milk. It's more carbs than coconut but not a lot. :-) I'd go with Grenadine's recommendation for avocado if you want to keep the fat in your smoothies.

Canned pumpkin is easy to find or you can just roast pumpkins in the fall when they're in season.

it sounds weird, but avocados are amazing in smoothies. prolly not so much in curries, howevs. :)

of course you would add some water too..and it would depend on what you put in your smoothies... i used to make a smoothie almost everyday that was about a cup of frozen blueberries + 1/2 banana + 1/2 avocado + enough water to blend - so good. – g. Jun 8 2011 at 3:59

To me, avocados are possibly the greatest "unknown" smoothie ingredient. Just a little bit adds the perfect texture. No sugar, lots of fiber. If you want a creamy smoothie then be sure to add a little avocado! Not to mention they are incredibly balanced with tons of vitamins and minerals! – Primal Toad Jun 8 2011 at 4:40

Use coconut oil, doesn't blend that well but a lot of bang for the buck.

Almond milk is great in smoothies. I don't think it has quite enough creaminess for curry but it's worth a try. I like to make my own but also keep unsweetened Almond Breeze around for when I'm crazy busy.

Often I will just water my coconut milk down. I just dump the can into the blender and add a can of water. Can't tell a difference IMO.

Almond Milk! Buy unsweeteened almond milk from the grocery store. I buy almond breeze - the one that has only 1 gram of sugar. When you look at the ingredient list you will notice there is quite a few... most are added vitamins and minerals. This is not really beneficial but its not bad either.

almond milk, and you can easily make your own if you dont want to buy anything with too many additives. Avocado as said before as well is awesome!! – Kelly Jun 8 2011 at 13:28

You can make milk out of any nut or seed super easily ...soak a cup of them overnight, strain, blend with 3-4 cups of water, strain through a nutmilk bag(or cheesecloth), and voilá! Nutmilk! You can add a little seasalt, vanilla and stevia if you so desire...play around with different nuts and seeds and water ratios and seasonings, and find what works for you..
