I like the bone broths, fermented foods, and organ meats of WAPF. We share 80% in common with them.
In the past 5 conferences of 1200ish people they look like the rest of America - Matt Lalonde made this same observation. Too many WAPF participants are obese and overweight so they lose credibility.
They tend to think vaccines cause autoimmune diseases (and some have been linked, but are not advertising (or not believing) that grains and legumes can (with the exception of GAPS).
I think grains and legumes can be prepared but many WAPF are addicted to carbs. They are eating SAD levels of carbs and grains and so aren't losing weight even with all the pastured meat and dairy!
They have GAPS (Gut and Psychology syndrome) followers who basically eat closer to Paleo, and they look slimmer! Dr. Natasha Campbell-McBride is a great speaker and talks about the gut the way Robb Wolf does but in much greater detail.
To Sally Fallon's credit, they are starting to recognize the grains and legumes are problematic for autoimmune disease.
In the 2011 - Chris Masterjohn, Sally Fallon, Denise Minger, Paul Jaminet, Kaayla Daniel (Whole Soy Story - recovering vegan), Jerry Brunetti gave some great talks.
There was a Paleo contingent (though small) - and we were in the best body composition of the group!
The food was great all pastured dairy and meat, organic produce, and gluten-free/casein-free options so you could eat Paleo easily (and we did)!
