IMO, we have nailed this paleo pizza crust and wanted to share it, as so many have requested in other posts. So the question is, will you make this pizza at home and recommend any improvements?
Paleo Pizza
- 3 eggs
- 1 clove garlic, minced
- 1 cup real coconut milk
- 1/2 cup coconut flour, sifted (Have a little bit more, like 4 or so table spoons ready to go just in case it's too runny. Add one table spoon at a time. Let it sit as well. Coconut flour expands, a lot!)
- 1/2 teaspoon organic baking powder
- 1/2 teaspoon celtic sea salt
- 2 t organic Italian seasoning (from znaturals.com but we've also used 1t each of oregano and basil
Preheat oven to 375 degrees.
Beat eggs in a mixing bowl. Add milk and garlic.
Add remaining ingredients and beat into the milk mixture. The dough will be thinner than usual in consistency. LET STAND 5 MINUTES. Add just a bit more coconut flour if needed. The dough needs to be spreadable and thin but not like pancake batter.
BUTTER YOUR HANDS and spread thinly and evenly on a pizza pan or cookie sheet lined with greased parchment paper.
Bake for 20-25 minutes in preheated oven. Watch for edges turning brown.
Remove crust from oven and turn over. Carefully peel parchment paper from the bottom of the crust and place crust back on cookie sheet, bottom side up. Bake 5-10 minutes longer till desired crispiness. Letting the crust cool a few minutes while preparing your toppings greatly helps the integrity of the crust. Add your sauce, pastured raw goat cheese, meats, veggies, etc Bake for another 5-10 minutes, depending on the toppings. We also did a white pizza version with added garlic, butter, and cheese on top. Personally, I do not do dairy but some of the family does.
