Until now I was thinking that I don't eat much offal. I eat pate' once or twice a week. However, I do eat Ox Tail about once a week. Is this considered offal? I am not sure, but I believe the amino acid make-up of it is different than your typical muscle meat (less tryptophan, etc). Would really be interested in knowing this. I love Ox Tail. It is really delicious.
Well the actual meat attached to the oxtail is indeed muscle meat. Generally offal refers to all the non muscle meat meat on an animal: organs, heart, tongue, brain, etc. I personally would not call oxtail offal, it's a muscle in the same way that, say, filet or ribeye is. Delicious though it is.
