Can you help me find the best banana muffin recipe? Best, meaning closest to non-paleo banana bread... My kids are really rebelling against eggs in the morning and I did try one recipe for banana/apple muffins (Everyday Paleo) which I thought were pretty good but my kids didn't - not sweet enough (which I am OK with fixing with a little stevia) and too egg-y (no idea how to fix that). I can probably get them to try Paleo Muffins of some sort ONE MORE TIME by telling them that I got it right this time, but it had better really be right :~)... I would love to silence those morning complaints for a while!

I have made it 3 times and sent it to work with my girlfriend and people go crazy over it. Warmed up with some pastured butter. DAMN!

I made this this morning, with the addition of a pinch of salt and nutmeg, 1/2 cup of coconut oil (probably too much, would go with 1/4 cup next time) and probably 3 TBSP of honey vs. 2 and 3 bananas vs. 4 (only had 3). I really wanted it to go over well, thus the added fat and sweetener, LOL! It is REALLY good, yummmmm... The kids agree, yay! Thank you! I am so happy! :~) – PMH Jun 17 2011 at 14:13
Oh and I cooked it for like almost an hour probably - I guess the added oil made it cook slower? Anyway, it wasn't close to done after 1/2 hour... – PMH Jun 17 2011 at 14:14
oh i bet it tastes amazing! but i just can't get on board with cooking almond flour and flaxmeal at 375 for an hour. until i find conclusive evidence that the pufa is protected by the antioxidents i just think this is too much damaged pufa. i hope one day it is clear that i am flat wrong. that would be really great. – Jack Kronk Jun 17 2011 at 16:30
Well it was really like 350 but I am sure that doesn't make a difference. Hmmm... Well, I will have to look more into it - I know it isn't ideal. They love it though :~) (and its better than Eggos!) – PMH Jun 17 2011 at 20:43
OK, I have made these about 10 times now, even for non-paleos and they are a huge hit. I now cook them in muffin form for 20 minutes at 350 (with the addition of the nutmeg, salt and 1/4 cup coconut oil). Perfect! – PMH Jun 25 2011 at 13:00

Check out healthbent.com; I believe they have a banana bread recipe that I've successfully made into muffins; it was either on Health Bent or Food Renegade; they link to each other often.

I made these last week, brought them to work (a decidedly UN-paleo group of people) & they were gone in a matter of minutes! Also my hubby has VERY high expectations as he loves banana & he scarfed half the first batch down!
