I keep seeing recipes for paleo pancakes floating around the blogosphere but don't know what to top them with. What do you top yours with? Any ideas for a maple syrup substitute (using maple extract, perhaps?)

I actually put my berries in the pancake batter. I cook on one side, and once I flip them I add 3-4 berries and then cook that side. Very yummy! – Want2BHealthyGirl Jul 27 at 18:10

Maple syrup and honey are natural - so unless you are looking for low sugar, I don't see a huge problem using either.

But, how about making a simple berry sauce? Just simmer down some berries in a bit of water, add some maple syrup or honey maybe. Maybe a little squirt of lemon. I make berry sauces and my kids just use it like jam. Pancakes would probably go well with it.

I usually top mine with strawberries/berries and skip the "syrup" all together. If I really want something sweet, I may drizzle local honey on top, but very minimal.

Butter, cinnamon, a touch of honey, and some crumbled up pecans...and some homemade whipped cream for a special treat. The kids love it!

How about plain yogurt mixed with some pureed berries. I use my immersion blender to make up this concoction. Yummy!

I also make a "topping" with ricotta cheese, lemon zest, lemon juice, vanilla, and honey. This is great for paleo "crepes." Pure magic.

Unfortunately this is just one of those things that I no longer eat. Avoiding grains and sugar and eating pancakes are just diametrically opposed...

A Paleo friend of mine makes egg "crepes" using beaten eggs and almond meal. They are really nothing like pancakes, but are a good "vehicle" for wrapping or supporting food. I don't think I'd eat a stack of them though.

I make my own fruit syrups. My favorite is blueberry/orange. I just put some blueberries in a saucepan with some freshly squeezed orange juice and simmer until fruit is cooked. If I want a bit more sweetness I will add a few dates. It is amazing how sweet just a couple of dates will make it. That will satisfy your sweet tooth without going over the top.
