Just saw the other thread on juicing veggies, and it really got me thinking about busting out the ol' Vitamix that I spent $400 on at the Del Mar fair.

I don't want to 'juice' veggies as the other post describes. I want to put the whole thing in there and blend it up, pulp and all. I basically have very little experience with this. We've made hot 'chicken tortilla soup' before, but that was pre-paleo and we'd change a few things now.

What are some slam dunk mixes you've made and/or ideas using a blender using whole vegetables?

I'm thinking stuff like carrots, celery, cabbage, tomatoes, squash, spinach, broccoli, maybe a pinch of serrano pepper, etc etc. add some salt and pepper. Could be a "V8" like drink, or even a soup base to add some grass fed beef chunks and sweet potatoes to (sorry couldn't resist - this question sounds way too vegan-ish)

(Side note: I don't mind a little fruit here and there mixed in, but I'm not really looking for fruit smoothie recipes :)

We DID try the tortilla soup, which was the first time I had had beans or chips in many months! It was delicious, and I didn't get a stomachache or anything. I was impressed that you could put the garlic in, skin and all. We also had strawberry-flavored ice cream with cabbage, carrots, and zucchini. So good! – VandyGear03 Jun 21 2011 at 22:54

You could try making gazpatcho with it. That's a very tasty blended soup that requires only raw ingredients. Check out the recipe from www.paleofood.com

Gazpacho
--------
4 ripe tomatoes, quartered
1 small onion, coarsely chopped
1 clove garlic, peeled
1 cup tomato juice
2 Tbsp. lemon juice
pepper to taste
cayenne, if you want to
1 sprig fresh parsley
4 ice cubes

1 medium cucumber, peeled and coarsely chopped

Blend all ingredients in blender or food processor, until vegetables are small but NOT pureed.

I like that one okay, but you might try other recipes from the interwebs

My favorite veggie smoothie : handful of cilantro, big handful of spinach, half of a cucumber, a little lime juice, one small avocado, a pinch of sea salt, a pinch of chipotle powder, enough water to blend...when it's pretty blended, I drizzle in some melted coconut oil while blending just a little more...salad in a glass!

My fave is beet, granny smith apple, carrot and ginger. Plus, the bright color just makes me happy! (although it can be messy to clean up!)

This might sound odd, but for breakfast this morning after a workout, I made a smoothie with the following:

Pumpkin, Coconut cream, 1/2 avocado, macademia nut butter, a few frozen berries, a little almond or coconut milk to smooth it out, ground cinnamon, ground cloves

It was incredibly good.

A few handfuls of Spinach, a few berries, a bit of cucumber (1/4), squeeze o' lemon (I actually use 1/2 lemon peel and all) a bit of water to make it drinkable. Mix low work your way up to high. It's pretty good, really.

A refreshing drink to get your fat and also enjoy when its hot: a coconut limeade (was served this in the tropics at a resort)

coconut milk with meat from fresh to your taste squeezed lime

super good, super refreshing and just the right amt of fat!

Although, I'm sort of on the fence right now regarding cabbage.

I love blending live sauerkraut into veg for a little kick!

Don't forget butter!

Hi Jack. I just found a fun resource: it's a sheet with three columns that you mix and match in order to make green smoothies in your Vitamix. Apparently the Vitamix people have a newsletter (and a message board, which has tons of recipes) and this was printed in it a while back:

P.S. We went back and got one. We made a sorbet the other night, and it was great (although we only used a quarter of the honey recommended, since we almost never use sugar). Last night I made a mole sauce for some pork loin, and it also worked like a charm. I like that it really does a pretty good job of cleaning itself in very little time.

I do a veggie/fruit combo smoothie. Use a large handful of spinach, 1 kale leaf, a tbls of super food, scoop and a half of plain whey protein, 1 apple, half cup of blueberries and a half can of coconut milk and 1 cup water.

I make a whole container of fresh juice every morning for two of us and we drink it throughout the day. This is my basic version, but I add or delete stuff and my fridge dictates. I try to keep mine green, since that is the most under consumed nutrient. I also add my veggies one at a time and add water as needed:

Grind flax seed first. 1 fresh mango 1 kiwi (skin and all) 1 green apple 1 cucumber (I peel mine because of the waxy feel) 2 stalks celery 1/3 of a bunch of fresh spinach 1/3 head of broccolli

sometimes I use beet leaves, too.
