Sorry this may be blatantly obvious, but I need to know. Is it a dairy product or a legume? I'm really not sure. And is it neither, just a protein? Please tell me.
Whey is a clear liquid protien that is in all kinds of milk. You can see whey in yogurt, its the clear liquid that separates from the casien (thicker white part) of the yogurt.
Cheese is made by draining the whey. Greek yogurt is also made by draining some of the whey off so that the yogurt that is left is thicker. Soft cheese is a simple cheese to make. Just make yogurt and put the yogurt into cheese cloth, hang it up in the fridge with a bowl under it and in 10 to 12 hours you have some nice spreading cheese. You could make it with store bought yogurt.
When I made cheese I made jytost from the leftover whey. It is sweet cheese an orange or brown colour, with a sort of chocolate bar consistancy, very strong tasting, good on salads.
