I am just finishing my 4 week crossfit bootcamp. We are having a party next week and I would like to bring a paleo dish. Any ideas? It will be a the crossfit box not at a home.

Perhaps you could give some parameters. Does it need to be easy to make? Served cold? On a budget? – Dave S. Jun 27 2011 at 16:55
Budget minded helps. Cold or hot either one is fine. Party is for about 25 people. – Lisa Jun 27 2011 at 17:56

Chicken lettuce wraps are a super easy, cheap paleo way to go.

other ideas: bacon wrapped asparagus.

toothpicked meat balls (mini kefta)

  • 1 onion diced, 2 garlic gloves cut in half, half a stick of butter, 1/2 pound of cut up bacon, 1/2 pound of natural sausage, a quart of cream, 2 tablespoons of Great Lakes gelatin

  • Saute everything in your skillet till meat is golden brown, then pour in cream and 2 tablespoons of Great Lakes pork or beef gelatin, simmer, then let stand to thicken

  • Serves 2-3

  • If you like it spicy add a 1/4 teaspoon of cayenne pepper

You can easily double or triple this recipe. You can also use beef.

CROCKPOT MEATBALLS AND TOOTHPICKS, FTW! (Even better when it's a beef/lamb/liver mix!)

I love this salad recipe called Sister Slaw from allrecipes.com. You could add a few slices of crumbled bacon and some thinly sliced chicken breast and have it be a very economical kale-based salad. It looks great with some multicolored veggie slaw (carrots, broccoli, cabbage, usually ~$1.50/bag) mixed in, and holds up very well in the fridge overnight - in fact it's better the next day, so making it ahead is easy. I've made it both with and without the maple syrup in the dressing; both ways are tasty in their own right.

Also, salads usually should be dressed just before serving, lest the vinegar or other acids break down the cellular structure in the veggies for too long - but in this case, the key to the salad is the long dressing time / cellular breakdown; it's what turns typically tough kale into a much more appetizing texture overnight. Therefore timing with the dressing for a potluck is not as much of an issue!

So: pretty, easy, cheap, timing-friendly. That covers a lot of bases for potlucking. :)

Here's a pic from the last time I made it, posted to my blog:
