I am just finishing my 4 week crossfit bootcamp. We are having a party next week and I would like to bring a paleo dish. Any ideas? It will be a the crossfit box not at a home.

I love this salad recipe called Sister Slaw from allrecipes.com. You could add a few slices of crumbled bacon and some thinly sliced chicken breast and have it be a very economical kale-based salad. It looks great with some multicolored veggie slaw (carrots, broccoli, cabbage, usually ~$1.50/bag) mixed in, and holds up very well in the fridge overnight - in fact it's better the next day, so making it ahead is easy. I've made it both with and without the maple syrup in the dressing; both ways are tasty in their own right. Also, salads usually should be dressed just before serving, lest the vinegar or other acids break down the cellular structure in the veggies for too long - but in this case, the key to the salad is the long dressing time / cellular breakdown; it's what turns typically tough kale into a much more appetizing texture overnight. Therefore timing with the dressing for a potluck is not as much of an issue! So: pretty, easy, cheap, timing-friendly.
