To quote the most intelligent thing my brother's ever said, we all love eating dead animals. What types of meat have you not tried yet, but would like to if you could find a source/had the money?

My list: Goat, horse (though I've heard it's not that good) venison, kangaroo, and ostrich

In my experience, many game meats don't taste like much or much different, as they tend to be lean. I have had venison, squirrel, alligator, turtle, ostrich, rabbit, caribou, elk, pigeon, quail, and boar, off the top of my head. Of these my favorites are probably venison and rabbit. None of them have a lot of fat (if you just eat the typical muscle cuts) so aren't necessarily particularly tasty.

Rather than branch out into ever-weirder types of game meat, I would like to move myself closer to the process, by killing and processing my own meat. I have never been hunting, but would like to do it and learn how to clean and process my own kills. I would also like to take part in a pig butchering. If anyone is doing one and needs a hand... :-)

Hmmmm, my people are French and they fed me all bits and organs from a lot of different animals - also my husband hunts and he bring home all sorts of critters that we eat.

But, now that I am within a day's drive of the Pacific Northwest Coast - I want to try geoduck.

You guys really need to go with me (or my sister Mei Ling, bless her where is she now) the next time I go to China. You could definitely have your wish fulfilled there. There's a restaurant down the street where I stay in Beijing that specializes in Donkey meat. When I go to Inner-Mongolia, I always drink the fermented horse milk (it's alcoholic). I won't eat dogs, cats or horses (or donkeys). They are my friends.

Shellfish, and more non-shelled fish. Growing up, I never really had much (any?) of either- dad was allergic to shellfish, and we were in the midwest anyway, so we just never ate much of it. I'd love to get a taste of just about everything. (although I'll probably never figure out- who looked at a lobster and said "ok, let's try that!"?)

Ostrich, kanagroo, snake, buffalo (had the ground meat, never a proper cut), rabbit, and more organ meats, for the rest of my list. :)

rabbit is awesome. It tastes, well, like rabbit... it's really hard to describe. It's what I imagine squirrel (kinda gamey and rich) would taste like if squirrels ate grass and clover instead of acorns and pine nuts. – Joshua Jun 28 2011 at 23:56

I've eaten most of what's available in North America, excluding horse from our friends in the frozen North.

I would like to try puffin, I watched a Bizarre Foods where they feasted on the little buggers and it looked awesome.

I would also like Goose liver foie gras pate from France... as I feel the duck liver variant we have here simply pales in comparison (and I could brush my teeth with that crap, I love it so...) .

I would try horse... but frankly I'm not a "lean meat" guy so I've already got my prejudices against it.

I have eaten most things that can run, fly or swim in North America. Horse we can buy at the local butcher up here (in Canada) so I have been curious to see if Zebra meat is any different from regular horse meat.

I've always been intrigued by balut - the filipino delicacy, a formed chick in the egg, boiled and served with vinegar. Sounds incredible. I will try anything that's put in front of me, but I'm hesitant about rabbits - they are my spirit brothers.

Pancreas! I've heard it's delicious. (but when I asked the guy at the farmers market if he had any, he responded 'no... Are you in med school?').

Also squirrel. And brains.

Maybe rocky mountain oysters.

Horse is delicious! If cooked properly, you can never tell the difference between that and a tasty tasty steak. Pinky swear. I've eaten a wide variety of tasty meat treats and other odd's and ends, beaver is gross people, squirrel is so good wrapped in bacon as it's super lean - think "devil on horseback" but with squirrel meat inside - or done up as rillettes. Ok, most anything in rillette form is pretty awesome :) Hmm.. had cod sperm three different ways and all were tasty. I think snake would be interesting.. or OO! Shark! I wonder about shark sashimi..

I've had sausages made from kangaroo, boar, and ostrich but would love to try proper steaks/cuts.

Traditional (for the UK anyway) game and hunted meat is delicious - venison, partridge, pheasant, rabbit, and even pigeon (if you remove the lead shot properly!) And, as nobody here is particularly far from the sea, all sorts of fish and shellfish.

Would definitely like to try buffalo/bison, and snake. I'm led to believe that hedgehog is very nice as well - covered in mud/clay and baked in an open fire.

Of course, there's always the more exotic delicacies - sheep's eyeballs (great offence to refuse one if offered - my father, in Africa during WW2, said you pop one in whole and they explode into a gooey pulp in your mouth when you bite on it, like a tomato I guess), bushmeat (I always picture Indiana Jones and the Temple of Doom - fried monkey brains), and the survival favourites witchety grubs, locusts, and various other creepy-crawlies that Bear Grylls and Ray Mears etc. like to chomp on.

I bought some bison that we're trying tonight for the first time. I also ate a chicken liver for the first time yesterday...not too bad. I think rabbit and duck will be next on my list.

I'd like to try dog. I have a dog and he's near and dear but i'd still eat a dog if given the chance. Friend of mine had some in South Korea.

I'd like to try an ostrich egg, still never had one.

I lived in Japan for a while but never encountered whale. I'd like to try that.

I had raw horse and it was good.

There is a restaurant near us that serves different kinds of exotic meats periodically - giraffe, zebra, water buffalo, etc. People really raised a stink though the time they advertised lion - guess that one was a little far out there for most folks. Too bad I they ran out before I could get there - THAT one would have been interesting.

And, by the way, squirrel is awesome - and not at all gamey like you might think.

I recently had the pleasure of eating Buffalo! It was delicious! And it's one of the absolute leanest meats around. Plus, it's full of flavour. Imagine the best beef you've ever had - now take out any of the greasiness and that's buffalo. I bought it at my local fresh farmers market about a month ago but haven't seen it since. It was quite affordable too. Apparently buffalo was once endangered but now it isn't? I hope they aren't endangered anymore...otherwise I've contributed..

LOVE Ostrich. It's by far my favorite meat to date... I really want to try Alligator, Kangaroo, Wild Boar, Antelope, Llama, Yak, Moose & Bear!

Kangaroo was absolutely amazing, on the water in Australia with my love...bonding over Roo skewers = i would HIHGLY recommend it! - Little Creatures in Freemantle, Perth..if anyone is out that way.

This is potentially embarassing... Duck confit. I've never had good French food, and I'd love to have somebody teach me how to cook with duck.

I've had bison, elk, deer, antelope, ostrich, snake, alligator, shark, bear, goose, wild turkey... I'd say the elk steaks and smoked goose and turkey were my favorite. Venison is great when it's prepared right, but so often it isn't.

I sampled some bear sausage many years ago and found it to be really fatty and gamey (I was eating SAD back then). I'd love to try it again and see if I like it better now.
