If you eat butter, garlic butter is delicious with artichokes....nothing wrong with homemade mayo though...mix in a little garlic and lemon juice and enjoy!

Third! And use some liquid bacon grease to make baconnaise, that will be TEH YUM with artichokes! – LadyAdmin Jun 30 2011 at 0:39

Marrow butter, without the butter - or with if you're eating butter, or seasoned duck fat - both would be amazing for your 'chokes. Enjoy!

I just roasted marrow bones tonight, scooped out the delicious warm marrow, added sea salt and used artichoke leaves to get it to my mouth. It was my first time roasting marrow bones and all the recipes said to eat it on bread. I had some artichokes from my family garden on hand and it turned out to be the perfect match!

Yep, mmmm. If I don't have time/ stuff to do the paleo mayo, that's what we go for, too (although often gee instead of butter, and Real Salt). Delish! – Liz V. Jun 30 2011 at 3:27

Avocado is the best mayo substitute ever, in my opinion.
