I have a cookie recipe that calls for lard as the fat. It's a shortbread-style cookie. I'm still fairly new at paleo, so my question my or may not have an obvious answer.
Instead of going out and purchasing lard or rendering my own from pork fat, is it possible to just collect the fat from cooking bacon? If I chill the grease to let the fat separate and use that in my cookie recipe (this is potentially for a fall festival at church), will that be an acceptable substitute?
I can't really help but your problem sounds vaguely...delicious?! But wouldn't bacon fat just be bacon fat and not actual lard? Doesn't mean the recipe wont work I suppose. I reckon you should just try it and then if the worst comes to the worst you'll have to make it again and OH NO you'll have to test out more tasty baked goods!
