Does anyone know a good way of cooking sweetbreads? I have just bought some venison sweetbreads and have never tried them before. A lot of online recipes seem to involve a lot of preparation, is this really necessary?

i'm in buenos aires argentina and sweetbreads are pretty common fare at the grill restaurants here - they're delicious! seems like they're just marinated in milk for a few hours and thrown on the grill. here's an article that might help: http://www.asadoargentina.com/lamb-sweetbreads-mollejas-de-cordero/

I had no idea that I actually like a "bread", hehe.

At first I hated the structure, too brain-like for my taste but after going paleo, it's yummidy yum.

I don't use any special preparation, just throw it in a pan on hot lard and that's it. Maybe top it will some cheese and parsley.

My father sometimes puts them between two plates and adds some garlic (which makes it turn blue, spooky) to make them more firm.
