With bacon? Hit up some asparagus, green beans, red pepper, onions, apples, sweet potatoes, leeks, green onions, tomatoes,...

Cucumber? Wow that's interesting!

I usually have tomatoes or mushrooms frying in the pan with the bacon, and its fantastic with a side serve of avocado.

Avocado and bacon are like Han Solo and Princess Leia. It took a while for them to get together, but they really are a great couple. And that would make potatoes Luke Skywalker. I used to love potatoes with my eggs and bacon, but found out that Luke is Leia's brother, which isn't totally off limits for some, but doesn't work for me....wow I've got a case of the Mondays... – jared Jul 11 2011 at 12:27

I've been enjoying a handful of Asparagus spears cooked in the skillet next to them. Especially if I have a small steak of some sort. Sprinkle a little cumin on the 'sparagus and grill it a bit.

I love salad greens with my bacon and eggs - have the eggs just slightly underdone and the yolks coat the salad - yum!

I fried zucchini with butter this morning with my slab of pork belly, homemade sausage, and eggs. It was good, although next time I'll add salt as it was a bit sweet.

Oy! Breakfast is my most favourite meal of the day! Eggs and veg and meat oh my. It can get tedious and boring eating the same things so I try to mix it up and keep it tasty, colourful, and big :) I keep containers of already cooked meat in the fridge so prep to cook is that much faster, none of the deliciousness is compromised in any way. Here is a weeks worth of my breakkies - I typically finish all the plates with an acid - a habit carried over from living in Central America and always a bowl of berries (about a cups worth). Hopefully you'll get some ideas out of these. Happy breakfasting!

Frittata 1.0: Chinese spinach, zephyr squash, Adirondack blue potato, ham, a squash blossom, mint, lemon juice, edible flowers

Frittata 2.0: Zephyr squash, squash blossom, San Daniele prosciutto, mint, flowers, a bit of Parmesan Reggiano shaved over the top, lemon juice

Hash + Salad: Rose + blue Adirondack + fingerling + sweet potatoes, steak, soft eggs. Salad: strawberries, flowers, tatsoi, kohlrabi, hakurei turnip, mint, purslane, avocado lemon juice

Japanese sweet potato, fingerling potato, avocado, basil, tomato, bacon, chicken, fried eggs, lemon juice

Tomato, arugula, avocado, basil, pea shoots, fingerling potatoes, lemon juice, scrambled egg, bacon

Sweet potato, red bell pepper, bacon, red potato, kale, soft egg

Steak, mushrooms, asparagus tri-coloured potatoes, poached egg

Jalapenos, banana peppers, or sun-dried tomatoes. Spinach is a good choice, but I burn out without some spice.

We nearly always throw in some peppers. We're growing anaheim and banana and bell - so we get whichever is ripe enough to pluck. I like to sautee the peppers for about a minute in the bacon grease before adding the egg.

Zucchini is my favourite with bacon and eggs. You can steam it, fry it, whatever, and it tastes great. I usually mix it all in together, but a big omelette full of egg, bacon, zucchini and mushrooms is amazing.

Cube up, roast and then re-fry all sorts of squash... yum. Also daikon radish, celery root. Puree and re-fry, or roast.

Vegetable latkes are an awesome side dish... grate, squeeze water out, mix with egg, fry til crispy.

Everyone morning I have a three-egg omelet (plain), cooked in Coconut Oil. Then I dip each bite into a mashed up avocado. To change it up, I use different spices on my eggs and avocado.

Today, two egg omelet filled with diced tomato, diced ham, chopped chard (lightly sauted in olive oil), diced.avocado, and cbooped fresh cilantro. Yummm

I keep a container of steamed chard in the refrigerator. I use it to blanket the plate, then top it with anything from fried clams to pork chops to bacon&eggs. Spinach would work too, but I think chard tastes better and is easier to spread out on the plate.

The bitterness of brussel sprouts meshes with the saltiness of the bacoc oh so well... Boil or steam up a big batch: beautiful. edit- sorry for bringing up old post, but I had this this moening ;)

What about some tomato soup? On top or on the side. And maybe a few green leaves to make it pretty. I personally love sweet potatoes... with anything. So I'd choose sweet potatoes with mine. But change it up every so often.
