Are Bean Sprouts paleo? Are they high in carbs?

Bean sprouts are typically soy bean sprouts. That puts them at the top of my personal banned list. Soy is about as neolithic a crop as exists. For those of us who don't have East Asian ancestory, soy is a brand new crop to our diets. It was introduced to the US within the past 100 years so there has been absolutely no opportunity for any genetic adaptation to soy consumption. Soy contains a substance that is chemically similar to estrogen. The research on the effects of this has gone back and forth between helpful and harmful but, as a man, supplementing my diet with estrogen just seems like a bad idea. Too bad because I love bean sprouts in a salad. |

I'd say no in princple, just because beans are not paleo. Sprouting some beans can increase the nutrient value, but at the same time increase the toxins. Weston A. Price Foundation, who apparently want to have their grains and eat them have a FAQ on sprouting. I don't see the need for eating them and would only eat them in moderation, if I really liked them. The carb ratio compared to protein is about the same as beans, but sprouts have much more water content, so no, they are not high in carbs. |

Bean sprouts are basically a green vegetable, but do they really taste good enough to be worth the trouble? |

To add, I came here to find out the scientific information as to if the growth of the sprout or the shoot as opposed to the bean/legume base/source was okay to eat on Paleo and okay for digestion (digestion affecting immune system being one of the basic groundings of this diet). |
