I have half a dozen cans of coconut milk sitting in my pantry, and I need to think of ways to use more of it on a day to day basis! I like the taste, and it's great in curries or similar meals, but I wish I had more options. Can y'all suggest some new, different things to do with it?

I've tried drinking it straight, but while I like the taste, in large quantities it starts tasting...weird. Dunno why, but I don't like it.

Ice cream: Frozen blueberries Coconut milk Raw Honey Cinnamon

Mix in a blender, should freeze up into ice cream.

Delicious.

A good snack just pouring whipped coconut milk over coconut flakes, nuts, and frozen berries, is a pretty fast and good option to ice cream, too! – Tim Rangitsch May 24 2010 at 12:38

I freeze it in ice cube trays and just take a few out and throw them into stuff. A few cubes with a bag of frozen spinach and a pinch of spice is delicious and super fast and easy.

I will throw some cubes in with fresh fruit that's about to go bad with a little stevia to make an ice cream in the Magic Bullet.

Makes great chocolate truffles...uh, so I've heard.

Use it as a sub for cream in your coffee

Use it for protein shakes and smoothies (if you drink those)

Pour it over frozen berries

Add it to eggs to make crustless quiches

use it to make creamed soups

Quiche is basically an egg, milk/cream and cheese base. I use coconut milk instead of regular milk, add whatever meat and vegies I have on hand, and cook it in a cast iron skillet as you would a frittata, top with cheese when the bottom has set and finish under a broiler. The texture is more quiche-like. My family likes the crust on quiche though, so sometimes I'll top with almond flour, butter and cheese for a crusty top. – W8liftinmom May 24 2010 at 17:18

Coconut Milk Chocolate Pudding

  • 1 14 oz can of TJ's coconut milk (or coconut cream)
  • 1 cup cocoa powder
  • 1 tsp vanilla
  • 1 tbsp powdered stevia (or another sweetener or your choice to taste)

Mix chilled coconut milk and cocoa powder well with a hand mixer. Add vanilla and stevia. Mix well. Chill in fridge until set. Enjoy.

Primal Alfredo Sauce

  • 1 14 oz can of TJ's coconut milk (or coconut cream)
  • pepper to taste
  • parmesan to taste
  • garlic to taste

Heat coconut milk over medium-low heat in sauce pan, stirring constantly. When thoroughly heated, add other ingredients to taste. Stir well. Enjoy!

Make a Thai curry. Get a can of green or yellow thai curry paste. Saute whatever meat you want, or fish, or shrimp, or just about anything in coconut oil. Dump the curry paste into the pan, stir, let it get hot and aromatic. Lower heat, add 1 can coconut milk, stir, simmer a bit, add whatever veg you want, and eat it. Thai curry is completely unlike Indian curry and the prep is incredibly flexible and it's a great way to use up oddbits of leftover meat/veg.

-Poaching chicken tenders or breasts in it leaves them incredibly moist and tasty.

  • I made a chocolate ganache for a pie- heat a can on the stove top, pour over unsweetened chocolate, mix well (i added some stevia) and refrigerate over an almond meal crust for an incredibly rich dessert.

-cook eggs in it

-add to soups to make them really creamy. a thai sweet potato would be good.

I like using it to poach salmon or shrimp. You can also cook bananas in it to create a nice dessert. I like to top it with macadamias and cinnamon.

My favorite treat...2 squares dark chocolate and decaf Celestial Seasonings Chai with a few drops of Stevia and half a cup of coconut milk.

I love making a salad with it:

  • baby spinach
  • berries
  • nuts
  • chilled coconut milk

Also, it's quite refreshing to drink straight up. I recommend drinking it in small amounts to start with, because larger amounts often upset peoples' stomachs.

I've not used it as salad dressing, but I usually pour a couple cans into a container and whip 'em up with a mixer. Then chill. It makes the milk creamy smooth and a little thicker. – Tim Rangitsch May 24 2010 at 12:36
@ahh Sometimes I chill it enough that it solidifies partially. It totally depends on what I feel like. Some days, I like it very liquidy, and others I like it thicker. Experiment and see what you enjoy. – Nick Jun 3 2010 at 20:45

I mixed it with Kefir, Coconut Kefir is delicious. A little cinnamon tastes Good in it And a good soup base as well.

I've found a large taste variance by brand, I only buy the organic versions without sulfur dioxide treatment now, because of taste

I mix in curry powder, shake, and then dilute with an equal amount of hot water for my breakfast beverage. Tasty stuff.

I just put a table spoon or two of full fat coconut milk over a cup of berries with nutmeg and a teaspoon of vanilla. It was so good and I'm full. A great dessert!

mix 5 egg yolks with about half a can of coconut milk and microwave (or use pressure cooker/steamer if you have one) for 2-3 minutes -- quick breakfast, low protein, and quite tasty.

mix coconut milk with unsweetened cocoa powder, sea salt, and some macadamia nuts, freeze it for 20-30 minutes. great snack.

Cut an apple into little cubes (skin included, no middle), add 2-3 teaspoons of coconut milk, and mix it well. Incredibly tasty.

Seriously though, Thai curries are fantastic and easy. Using it in soups or smoothies is delicious. But my personal favorite is to make chai tea or hot chocolate with it.
