Hey everyone, just a simple question. I have tried the sugar free preserves from Smuckers and they're alright, but not as "thick" as the other jams (their #1 ingredient by weight is water so that explains it). Anyone else here know of any other brands of sugar-free, low-carb jams and jellies besides Smuckers? Extra credit if you find one sweetened with erythritol, that'd be awesome. Thanks in advance.

When I want "jam", I just cook down some low glycemic berries with some lemon juice and sweetener of choice (if necessary, depends on how sweet the berries are). You can add some chia seeds as a thickener. Since you're not going to can this, make only as much as you need for a day or two, it won't keep long.
Blueberries make a great no sugar jam. Add 2 qts cleaned fresh blueberries gradually to heating thick bottom pot, mashing slightly as you go. SImmer uncovered 20 min until it reduces like a jam. Will go from foamy to shiny. Process 1/4 pint jars in water bath canner 15 min and seal. Very safe due to acidity. Sometimes I add a half pint raspberries or strawberries. Blueberries are key. They are less dry than other berries and form the jam base. You must cut up other berries well, and mash them so they are not chunky, or the jam will separate. Check Ball canning book. It is the safest thing to can. So good. Keeps a year. Or just refrigerate. The only jam I eat now
