I recently started eating some of the dehydrated organic coconut I had lying around, as a snack. So has my wife. It's delicious!
Then she asks a question about processing, and I honestly don't know the answer.
There aren't any sneaky chemicals likely to be in use to process organic dehydrated coconut without being listed on the ingredients label. Right?
I'm assuming it comes in a bag. If so, read the ingredients. If its only coconut thats one thing. Though, after years of experience, I know that for me its not wise to eat it and/or have it around. It only serves as a snack which usually leads to overeating.
And I mean, not to get holier than thou, but its pretty processed yknow? That whole in-nature-youd-have-to-work-pretty-hard-to-get-that-much idea. kinda like how i feel about packaged, ready to eat nuts.
But hey if it works for you and keeps you happy and feeling good run with it.
I thought I had found something great when I found dessicated coconut at my supermarket (dried coconut). It did contain some sort of preservative so I regretted buying it immediately. Still I ate some of it. My experience was that it was highly addictive, I could spoon mouthfuls of it and I couldn't stop - leading to a massive glucose/insulin spike I believe. I won't touch it again by itself!
I say eat it as long as nothing is added. Let's do organic is a good brand. I have seen plenty of big company brands with crap added, but as long as the ingredient is only coconut, I would not worry. ! I also buy the Tropical Traditions. I make coconut milk with it for my coffee. YUMMY~
