I make a week's work of breakfasts via what I call "breakfast loaf".... kinda like a meat loaf.
15 eggs - pasture raised organic
a splash of cream
1.2lbs (~18oz) ground beef - grass fed organic
2 carrots, 2 celery stalks, a couple handfuls of spinach, couple pieces of garlic, several kale leaves (two kinds), a handful of cilantro, a red bell pepper (if I have one)
I saute the ground beef & chopped up veggies in a couple Tbs of coconut oil. I transfer the veggies & ground beef to a 9 x 13 pyrex. I scramble the eggs with the splash of cream and flood the veggie / meat mix with eggs. Pop the baking dish into the oven ~250F for ~1hr. When everything is firmed up & cooled a bit , I cut into 6 square pieces. Two pieces each go into a small square ziploc storage containers. These loaf pieces are edible cold or microwaved w/ or w/o a salsa type topping.
Take care not to burn the mix.
Convenient, easy, tasty... each square has 2.5 eggs & ~3 oz ground beef and a LOT of veggies.
Can be eaten are fridge temp, reheated. Finger food if pre-cut or fork & knife meal. I use various salsas to 'spice it up".
Add some veggies for variety, leafy greens are great any time of the day. Also, you could throw in some bacon, sausage, or some kind of fatty meat if you like that. I'm more of a fresh pork belly or fatback kind of guy. You could eat leftovers from the previous night as well. I also eat sardines with olives and olive oil on some days when I do feel like eating breakfast.
This is so simple yet so tasty. We make it with 7 eggs, thinly sliced sausage and chunks of bacon or ham, tomatoes, mushrooms, bell pepper, onions or shallots, lots of fresh herbs and a pinch of paprika, cumin. It is lovely hot, but just as nice cold with salad or in a packed lunch, a slice for breakfast gets the day off to a spicy start. Great suggestion!
While eggs are great - I do eat a 4-egg breakfast once every three days or so myself - you need variety. Eating the same thing every morning is not simply boring but unhealthy too. Here are some of my ideas:
- raw bell peppers stuffed with guacamole
- a large serving of salad with bits of cod liver, sprinkled with a mixture of cod liver oil and lemon juice
- peppers filled with home-made chicken liver paté
- home-made grilled sausages (no additives / preservatives) with a large helping of fermented veggies
- cold smoked salmon with salad (made with fresh home-made mayonnaise)
My go-to meal is 2 eggs, mixed peppers and onions, spinach and sometimes sausage, chicken or pork all mixed together with some seasoning to give it a kick. I like to have half an avocado and fresh salsa on the side. Delicious. Satisfying. Flavorful. :)
I am not often bothered by a need for variety so this may be only a once in a while thing for others but it works well for me.
½ banana (not local or paleo but makes a good smoothie so I cheat)
½ cup mixed berries (composition varies - strawberries, blueberries, raspberries, blackberries)
2 chard leaves
2 kale leaves
1 cup mixed juice (composition varies - blueberry, pomegranate, cranberry, cherry, apple, orange)
2-eggs any style (from pastured hens - my hens, my pasture)
¼-lb sausage, bacon, or leftover broiled or roasted meat - from pasture raised or wild animals
coffee - not paleo but I'm still addicted
