I want to make some coconut milk kefir, but the only coconut milk I can find where I live shows the ingredients as coconut extract (sometimes coconut kernel extract) and water. Sometimes with extras like guar gum, etc. Needless to say, I will skip the latter.
My question is - is this what I should expect from a tin of coconut milk, or what should I look for? Is there a difference between coconut extract and coconut kernel extract?
