Truth is, as damaging as my diet has been to my health (long list), my eyes were always sparkling!
Welcome, glad to see you are plan on making a diet change. "Yellowish" eyes are concerning as that can be a classic sign of jaundice indicating something may be wrong with your liver function. A good first step would be to see a doctor and have your labs (LFTs - liver function test) checked to see what is going on. Please don't wait on this, you only have one liver; best to take care of it.
Are your eyes: yellow, orange-ish, or off-white?
Yellow eyes are not a good sign. There is nothing benign that could cause the eyes to yellow. While the paleo diet did not turn your eyes yellow, it is possible that you triggered a latent jaundice issue with your liver's ability to process bilirubin by putting extra load on the system (i.e. more fat). The other possibilities (cancer, hep, etc) would just be coincidental.
Orange-ish or off-white are typically not as big a concern and is typical of carotenosis. Although I would assume you ate more squash, sweet potato, and carrots previously.
A proper, physical medical exam is absolutely necessary -- As in now, not tomorrow or whenever you can get to it.

I would note that ideally you want to get 10-35% of your calories from protein or up to something like 1g per lb of lean body weight ( Or ideal body weight if building ). If you're on a HIGH PROTEIN ( Majority of macros ) diet that is really bad and should not be done.
On a tangent, I listened to a 'raw food summit' for the luls...it was painful. Apparently eating raw vegan increases your psychic abilities...I shit you not, this was said.
Immediate red flag: "high protein paleo"
Particularly if your body has become acclimated to a low-protein vegan diet.
There is nothing good about a high-protein diet. wtfgod and bluekitty hit it on the head. In your case, unless you've taken up radical body building (which I also find silly) I'd suggest more like 8-15% of calories from protein, working up slowly to 15. Maybe 50-80 grams per day.
The paleo diet is all about eating a wide variety of natural whole foods with a major emphasis on veggies! We eat more veggies than your typical vegan. (most of us anyway)
