I am testing dairy and potatoes. How long would you expect a body to take in reacting negatively? I had the dairy yesterday at noon. I'm looking for any problems with swelling or pain in my hands (early stages of osteoarthritis, I'm 43.) Also--are any triggers "accumulative"? One day of dairy = OK but two or more could create the problem?
