I'm doing a low carb, high fat version of Paleo, and I'm searching for a good bagel or english muffin like recipe that I can make in the morning and spread coconut oil on.
So far, I use this one:
2Tb coconut flour, 3Tb ground flaxseed meal, 4 eggs, pinch salt, 3/4 tsp baking powder, baked in 4 muffin tin pans at 350 for 20 mins.
It comes out delicious, but I'm looking for a little variety. Does anyone have one?
This is my favorite muffin recipe. I use stevia because I have a sweet tooth. When it's straight out of the oven, it's very fresh, delicious and moist-but-not-doughy.
