When I eat saturated fats I rapidly start gaining fat, does anyone else experience this or know the mechanism behind it? Ii have tested it multiple times by cutting out sat fats and reintroducing them again, within one or two days of replacing plant fats with beef fat, I can see the fat starting to accumulate mostly around my belly, this happens despite the exact same calories and macronutrient ratios. I can even be in a 500 calorie deficit and the same thing will happen.
It's annoying as clearly there are health and hormonal benefits to saturated fat consumption, but I don't fancy being overweight by eating them!
apart from the increase in fat around your belly when you swap unsaturated fats for saturated fats, does your weight increase?
...if not, then you may just be 'moving' body fat from one place to another. looking at some study refs (link below), saturated fats are mainly deposited around the middle whereas unsaturated fats are mainly deposited around the butt & thighs.

Well, if you're sure your carb intake is very low, as in 70g per day or lower, preferably 20g per day if you're seeing this effect... then I'd say this effect has something to do with your genetics and you may want to get a 23andme or similar company to give you a rundown of your code. For the moment, stick to the fats that work for you, and stay at the generally acceptable level of 30% fat (of calories) until you figure out what's causing you harm.
Another thought: Maybe it's a liver fluke? Or a pathogenic bacteria? The flora in your gut should be eating only/mostly carbs, but if you have one of these two (girardia is one that I think might eat fat, but you should check with a doctor for a clearer list), it can react to extra fat in the same bloating way that people react to carbs. Just covering the bases. See a gastro if you already have a relationship with one.

Ahh, well then I guess it's pretty obvious what the problem is. A typical Paleo eating plan involves eating meat and salad as the primary meal, maybe an omelet for breakfast, but it's often very low carb, much lower than the OP is experiencing. A typical day for me (although I'm not a perfect example because I'm also ketogenic) has me at less than a single gram of total sugar (including fruit), and about 20 g carbs, 40g protein, and 150g fat... most of that is saturated fat, my preference is beef fat. On most days I don't even need to take a multivitamin because I hit most of my nutrition targets according to cron-o-meter's nutrition tracker.
It is recommended to limit the saturated fats amount to less than 7 percent of total daily calories. That is in 2000 calories not more then 140 of them should be directly from saturated fats, which count up to 16 grams. Eating nuts and fish instead of foods with tropical oils can help in gaining this ratio of saturated fats. The excess consumption of saturated fat causes increase in the fat in the abdomen and liver. Over consumption of saturated fats also can turn on specific genes in fatty tissue, which increases storage of fat resulting in deposition of tummy fat around belly. Over consumption of saturated fats causes visceral fat accumulation a faster rate. The only health related or fat deposition with the saturated fat is due to the over consumption.
