I'm looking for things to do with all the peppers I've picked up at the farmer's market, but can't seem to find any recipes without white sugar. I have banana peppers right now, but would love recipes using other peppers too or even green beans, if you have them! Thanks! :)
But jelly has sugar in it.
You can make pickles without sugar, but generally again, sugar is in the cure.
Paleo folks would say use some weird non-white sugar, but chemically, they're the same. Or honey, but it'll taste like honey.
I've had good results using frozen pureed fruit (you can buy it in packs at Whole Foods) or frozen fruit concentrate in place of sugar in a lot of recipes. I substitute 1/3 cup frozen pineapple puree or 1/4 cup frozen pineapple concentrate in a recipe for each 1/2 cup sugar.
Mark Bittman has a good recipe for pickles that uses salt and dill, no vinegar or white sugar. I tried it and it was delicious. Can be used for cucumbers or other veggies.
