Hi everyone. What are the safety hazards that should be taken into consideration when one consumes ground meat(Canadian) and in the raw. I am attempting to make the transition to raw lacto-paleo and would like to feel secure in doing so without risking health. The source would be grain-fed and finished meat from Canada. So far so good with grass-fed beef roasts consumed raw, but they are tough to consume. Where I will be headed ground meats are much more readily available and convenient so...I was wondering if anyone would share their thoughts on this.
From what I've read, if you freeze the ground meat for at least 14 days it kills any nasty stuff that may be in the meat. Please double check this, bc I'm writing this off the top of my head!
Also, if you have access to a meat grinder, grinding your own is a good solution as well as none of your fresh ground meat will have been exposed to air/transport etc. Cut the sides off and grind 'er up. You can get grinders for a decent price via ebay, I love mine. Might be worth it for you if you're planning to do a lot of raw meat.
Alternatively, you can always ask a butcher to grind certain cuts up for you fresh.
