As far as "can you get your carbs in?" - Most people unless they are athletes or do heavy physical activity probably don't need much at all (some would say any) carbs. In the absence of carbs, your body will use fat for fuel. – Karen Jul 29 2011 at 23:56
what kind of macros are you aiming for? – kay Jul 30 2011 at 3:47

White potatoes and other tubers (sweet potatoes, yucca, whatever starchy vegetable you want) Not everyone feels best eating many carbs but if you do those are all good choices. White rice isn't terrible either.

Your fruits and vegetables will add plenty of carbs, sweet potatoes are also a good choice, would stay away from the white potatoes and rice.

Why avoid white rice?? – Ben Jul 30 2011 at 2:06
potatos are i think like white and brownsugar or rawcane sugar. some potatos which are modern breeds are go very quick in the blood. others which are older traditional breeds go slwoer in the blood. so its more balanced bloodsugar lever. do you think the same? – oak0y Jul 30 2011 at 10:17
There's a long answer but basically it boils down to the fact that rice and white potatoes have a very high carbohydrate content and low levels of micronutrients with little nutritional value compared to vegetables or fruits. – Elizabeth Jul 30 2011 at 23:57

a lot of fructose being consumed here – DudleyP Jul 30 2011 at 8:32
thanks and what is fructose? – james baxter Jul 30 2011 at 10:26
The question was about what carbs you could eat on Paleo. I was not suggesting that the entire list be consumed at once:) As for recipes, the beet/mango salad was just steamed beets and fresh mango cubed and mixed together. The grass fed meat loaf is from the Paleo Everyday cookbook. – Ginny Jul 31 2011 at 3:25

Any food originally from a plant (other than refined oils) will contain some carbs. Fruit will have considerably more than most vegetables, other than the starchy tubers and roots. Nuts will have a small amount also. A few animal foods such as liver and eggs contain modest amounts of carbs. (Oops, forgot to mention a potentially huge animal carb source - dairy other than heavy whipping cream and butter) How much carb you eat will depend a lot on whether you need to lose weight, any health issues, physical activity etc.

Added: A good guide to the amount of carbs to eat is here: http://www.marksdailyapple.com/the-primal-carbohydrate-continuum/

Carb intake here varies here from "Zero-carb" to athletes often eat sweet potatoes after heavy workouts to those who eat rice. Rice is not a paleo food, and generally there are fewer people here who eat rice even than those of us who eat some dairy. Rice is considered a "safe starch" by those who follow the Perfect Health Diet, but even the PHD recommends very much lower intake for diabetics, over weight, insulin insensitive etc.

Yet more - For instance, I eat low carb, typically @40 grams per day because of weight and health. Most of my carbs to keep the number that low come from non-starchy vegetables - mostly greens - small amounts of full fat dairy (lots of people here don't eat dairy) and small treats of berries.

All foods except meat and eggs contain varying degrees of carbs

Eggs contain small amounts (6%~) of carbs by calories, and liver contains a small amount (@10%~) also. Even "Zero Carbers) often wind up eating a few grams each day up to @5% – Karen Jul 29 2011 at 23:42
Sorry, that should say 5 grams, NOT 5% – Karen Jul 29 2011 at 23:52
