Blueberry flax pancakes

2 eggs, 2 Tbsp finely ground flax seed, 1 Tbsp water, 1/2 tsp baking powder, pinch of salt.

To taste: cinnamon, vanilla extract, stevia, and fruit-sweetened blueberry spread.

Optional: Replace water with heavy whipping cream.

Mix all ingredients together, pour onto pan greased wtih coconut oil, ghee, or Kerrygold butter, wait for bubbles to come up, flip, eat. No need to add anything on top!

You can mess around with ALL of the variables to get different consistencies.

Ingredients:

200 grams of almond flour 2 whole eggs 1 tablespoon walnut oil (can use coconut oil also) pinch of salt 1 or 2 tablespoons agave nectar (or honey) depending on how sweet you want them 1 tablespoon pure vanilla extract

The above are the basics. Add blueberries, raspberries, carob chips, coconut flakes, banana chips, pure cacao powder, or any other paleo-friendly ingredient for flavor. I like blueberries the best.

Mix all together

To cook:

Place enough coconut oil to coat the bottom of a medium to large pan. Place this on a medium low heat (setting 4 of 10 on my German stove).

After the oil has melted and is heated, place small dollops of the mix in the pan. It's easier and quicker if the pancakes are smaller.

Cook the pancakes on one side until they are firm enough to flip. This can take 10 minutes or longer as you want to cook them on a lower heat. Be patient or all you'll end up with is pancake crumbles! The second side cooks much quicker, however, so watch them closely!

When they are finished, place them on a plate to cool before eating. My wife and I actually like them better after they have been in the fridge for a little while. They are great for roadtrips and when we travel.

You'll find a lot of recipes for paleo-friendly pancakes online, and I have tried a lot of them. This recipe is my own interpretation and came from a lot of trial and error. The little bit of vanilla in the cakes really makes the flavors pop!

I like the almond flour better for the pancakes rather than the coconut flour. We use the coconut flour to make scones and paleo banana and zucchini bread, though.

2 bananas 1 egg 2 TBS raw almond butter

Blend together to make a Batter. Pour on a coconut oil greased griddle and cook! Makes 6 small/med. pancakes :) We make these about once a week!

I know this isn't really a pancake but this omelet recipe really reminds me of the same flavors and textures as french toast: http://www.paleomagonline.com/recipes_breakfast.html I usually make the egg part and instead of applesauce and strawberries I put a little pasture butter on top. So good!
