I was served green beans the other day and realised I didn't know if they were a legume or a vegetable. Can you tell me? Also, I think I knoe that peas are legumes, am I correct?
Botanically they're legumes. Personally, I regard young bean and pea pods and pea shoots as acceptable vegetables since the problematic compounds develop in the more mature seeds.
Peas are legumes, but most legumes are vegetables. Beans are also legumes, and they are vegetables. It's sort of like a volcano is a mountain, but not all mountains are volcanoes. A legume is a vegetable, but not all vegetables are legumes.
