Lke with everything else, it isn't only a question of beer: yes or no. There are different quality beers out there. Beer can be made out of many things. Most beer is pasturiesd, but there is also unpasturised beer out there, which I guess would be probiotic. Would it?

I caught 5 minutes of a documentary yesterday that reported on the discovery of tetracycline in Egyptian mummies. After a long search, they found it came from the beer they used to drink. I wonder what they made beer out of.

So if one wanted to look for paleo beer, what would it be made out of?

egypt is a terrible example of anything paleo. They had grains, and cancer, heart disease and other diseases of civilization, in addition to relatively poor health compared to that time period. – Stephen-Aegis Aug 7 2011 at 14:16

Fermented Drinks can be wildly healthy. Fermented to the point of alcohol, mitigates some of that health,but in small doses may have some benefits. Its all about what you make it with.

Not so sure Sorghum is any healthier other than the lack of gluten. Its still a grain, and still contains some lectins, similar negatives.

Id be more inclined to drink a Dry Hard Cider. Im fond of Strongbow, low sugar, good flavor as a bottled alcoholic treat, that and a Good Cabernet. ;)
