It's time for my first whole chicken roast! I have a small fresh small hen (no head or feet), an oven and a about 2.5 hours of bake time. I have found a few recipes, but I want some of your tried-and-true faves. I know my available bake time is not ideal, but I want to make it work tonight or she's goin' in the freezer. :-/

I just lightly sprinkle the inside and outside of the bird with sea salt, throw some onion slices and/or lemon wedges into the cavity and bake about 350 F for an hour.

You can slide some butter under the skin over the breasts before baking to keep them moist- or next time brine the bird for a few hours before baking and skip the salt sprinkle.

You can also cut some yams into chunks and add them around the bird to cook at the same time so they get seasoned by the drippings as they cook.

I laminated the recipe with packing tape when I first read it in the mag, Thomas Keller is a freaking god, and have never been sorry. The reviews are helpful too, as people who make changes/adjustments will post, in addition to tricks and tips.

We like to do the "beer can" chicken, I like that it doesn't sit in a pool of liquid and get all soggy on the bottom. Also like to do it on our big green egg (ceramic grill) and put apple-wood chips in with the charcoal. They come out fantastic!

But, if I do it in the oven I really just mix butter and minced garlic and herbs and rub it all over the chicken and under the skin. I put some kind of citrus in the cavity, limes, lemons or oranges usually & maybe some whole garlic cloves and some onion. Then bake it at about 350 for a couple of hours.

i have made all of these from simply recipes, and they are all amazing. thomas kellers is in here, too. i like roasting a chicken in my cast iron skillet. beautiful. has to be one of my favorite meals.

The best chicken recipe ever - Zuni Chicken Just ignore the bread salad portion and you'll be extremely happy, maybe even ecstatic. Seriously, it's super simple and it gets rave reviews every time I make it. This will make you love whole roasted chicken.

I'm going to pimp the Alton Brown approach again here. He always has simple methods that teach you whats truly important about what you're doing. Most of his stuff doesn't need too much tinkering to make it paleo either.
