What are your favorite vegetables and which do you eat the most of?

You know.. I don't think there's a vegetable that I've met that I haven't fallen in love with. On a daily basis I like to go with heartier leafier greens such as kale that are eaten raw or really quickly pan cooked, braised, oven roasted, stir fried, for at least one of my meals, and brightly coloured tubers, Adirondacks/all varieties of sweet, etc., but always always will eat for the season. Right now a lot of sweet little new tubers - the size of your thumb!, zucchini, beets, avocado, fennel, and really cool heirloom lettuces. Deers Tongue is crazy good. I'm an equal opportunity veggie eater :) |

Roasted asparagus, roasted brussels sprouts, any greens sauteed in bacon fat with lots of garlic, lemon juice, zest and sea salt, eggplant prepared almost any way....lately though, I eat mostly Zucchini and lettuces from my garden! |

Broccoli is my #1 and Spinach #2 but I probably eat spinach more often because I like to mix it with romaine lettuce in a salad which I eat several times per week. |

Heirloom tomatoes. Can't get enough of them right now. In salads, fermented in salsa and relish, on big juicy grass-fed burgers... By themselves with a little sea salt. |

Roasted cauliflower with olive oil and parmesan. You've never had a better vegetable. I also like some tallow fried hashbrowns or potato pancakes. Yumbola. |

Now that I think of it, sweet potatoes are the only vegetable I eat these days. My favorite types are the white-fleshed varieties, specifically the Japanese ones with purplish skins. |

My absolute favorite is artichokes. They're truly awesome. But these days the veggies I eat the most are eggplant and tomatoes. For no other reason except that they take over my yard every summer and they're both terribly versatile. It varies by season, in the cooler months I eat a lot of kale, turnips & beets (greens included). |

Yellow squash/zucchini, spinach and fresh okra. I can eat squash and zucchini all day, every day, I love the stuff. Fried in butter, boiled till it's mushy, or raw in a salad, I don't care, I'll eat it. I'm the same with spinach, I'll eat it any way, raw cooked, or straight from a can. I grew up eating okra grown in our garden, and absolutely love it, most people hate the stuff, but I wallow in it's slimy mucilaginous goodness. I also have a love/hate relationship with brassicas, broccoli, cabbage, brussles sprouts, I love the way they taste, but since going paleo my stomach can't handle them, if I do eat them I know to prepare myself for the half hour of stomach cramps. |

Any kind of vegetable that makes a delivery vehicle for delicious fat - pastured butter, bacon fat, grass fed tallow - or sauces made from the above like hollandaise (including yolks from pastured eggs). I almost don't care what it is - if I can slather it in fat, it's delicious. |

Tomatoes. I literally will eat them like an apple. Except the juices squirting everywhere makes it difficult to eat in public. Also, Baby carrots are a perfect snack! Get one tablespoon of almond butter, and BAM, perfect Paleo fast food! |

Bell peppers (red ones are the best)! I despised bell peppers as a child, but now I can't get enough of them! Stuffed peppers, diced peppers in soup, raw pepper strips dipped in sour cream, peppers in stir fry...they're everywhere and they're delicious! |

Pizza! No really, my current favorites are bean sprouts (mung bean, not soy) and snap peas. I also like bok choy, napa cabbage, and several varieties of winter squash. I love cooking mustard greens, spinach and collards together in butter and/or olive oil until they're soft. I probably eat romaine lettuce more than anything else. I could munch on the hearts all day. |
