i know coffee isnt paleo, but i drink it anyway,

in my pre paleo days I used to drink ALOT of iced coffee drinks( usually with soy milk and later on i switched toregular milk) , the type you get from places like starbucks that tend to be sugar laden and have artificial flavors. since being paleo i havent had any iced coffee and i miss them more than i miss carbs!

does anyone have a recipe or know how i can make a homemade iced coffee drink that would fix my cravings?

Make coffee. Pour over ice. Add cream or coconut milk.

what about almond milk? – Grassfedkid Aug 11 2011 at 16:18

I'm fine with dairy so my first preference would be heavy cream. I added coconut milk as an afterthought ;) I personally stay away from almond milk because while in moderation a few almonds are fine, I don't want to drink them. That being said, there's probably not that much wrong with it especially in the amount needed for an iced coffee, and would likely give an excellent flavor to the beverage. If you dig the almond milk, I say go for it! – Casey Aug 11 2011 at 16:24

Actually tastes better if you brew the coffee and let it sit in the fridge over night or at least a few hours till its chilled... – CR Aug 11 2011 at 16:29

really? Almond milk better than coconut? What were the reasons given? Almond milk is going to be pretty high in o6, coconut seems vastly superior in every respect. – Katie Aug 11 2011 at 17:08

Yes! I created a Paleo Frappuccino recipe!!!

http://www.intentionalconsumption.com/index.php/2011/07/01/paleo-frappuccino/

1/2 banana (you can use 1/4 of a banana if you are watching your carbs)

1/2 cup coconut milk (from the can)

1/2 tsp. cocoa powder

1/2 cup strong brewed coffee, cooled/cold

1/4 tsp. vanilla extract

3 large ice cubes

I love my Magic Bullet! I just threw all of the ingredients in and blended it until the ice was chopped up! And guess what? It came out wonderful! Awesome flavor and taste. Take that, Starbucks!

bookmarked it thank you! – Grassfedkid Aug 11 2011 at 16:19

Starbucks Americano with heavy cream, iced or hot. Delicious!

This is my favorite drink too - I don't like sweetener in my coffee – HeatherC Aug 11 2011 at 17:01
Funny, before Paleo, I would have gagged on this drink. Now, it tastes sweet to me. – Annie Aug 11 2011 at 17:28

I suppose the truly paleo way would be to use coconut milk. Just put in a blender with ice and coffee. There's should be enough sweetness in the coconut milk for you.

That sounds more like a frappucino, which is also good to know how to make :) – Casey Aug 11 2011 at 16:16
I am going to try this, and I also am going to try to come up with a Paleo Chai Tea Latte. – Nikki Aug 11 2011 at 16:21

Brew some coffee (I use a large french press), thrown in some ice cubes, thick lemon slices and a couple of cinnamon sticks. Keep in the fridge for a couple of hours and that's it!

Plus one for the flavorings. – Casey Aug 11 2011 at 16:16
Interesting. Might have to try that one! – dubpluris Aug 11 2011 at 16:17

I keep forgetting about my french press! – Nemesis Aug 11 2011 at 16:19

I love my french press! I double the grounds when I plan to make iced coffee so the ice doesn't water down my coffee too much. – sherpamelissa Aug 11 2011 at 16:28
No sweetener because just because that's how I usually drink coffee. – Dinis Correia Aug 11 2011 at 16:30

You might also try cold brewing your coffee. This provides a less bitter result, which may allieviate some of the need for sweeteners and flavorings.

I find that using a french press instead of drip coffee makers fixes the bitter coffee issue. – HeatherC Aug 11 2011 at 17:03

Mmmm I like Steph's!

Tips for straight up Iced Coffee:

Brew your coffee stronger than you think you need as the ice will dilute the taste; or Make yourself some Coffee Ice Cubes

For sweetness, I like Stevia powder. Haven't tried to dissolve in a cold liquid yet so I cant comment there. You can find stevia liquid or you could simply dissolve a bit in some warm water and then cool with ice.

I know that KAL brand stevia (the type we use) dissolves just fine in cold...just stir with one of those little whisk thingys. – Karin Aug 11 2011 at 16:25
Coffee Ice Cubes - only discovered this recently for some reason, but it's brilliant. – Mrwok Aug 12 2011 at 7:05

I, too love cold coffee, both the frozen-blended kinds (which you CANNOT get sugar free, even when specified at Sbux) & the cold-brewed kind. My husband & I started brewing our coffee in the evenings/at night & putting it in a large pitcher in the refrigerator overnight. The next morning the coffee is still fresh but now its ice-cold. This alleviates the need for ice cubes & hence the watered-down effect if you choose to sip instead of gulp. I add whole, heavy whipping cream or coconut milk or if I'm really jonesing I'll do a splash of sugar-free hazelnut or caramel syrup in my cream. Its DELISH! If you want the blended kind just add the cold coffee to your ice, cream etc in a blender & hit it! :D

wasnt sure if adding sugar free caramel syrup would be "paleo" but id use it as a treat. – Grassfedkid Aug 11 2011 at 16:26

I stopped using the sugar free syrups, in going paleo I would rather watch the processed food than the calories – Elizabeth Aug 11 2011 at 16:31

I'm going to try the first recipe, that sounds really good. I typically drink 1 cup of coffee a day, use raw cream and raw honey, good with a sprinkle of cinnamon as well. If we are out of the raw cream (it's expensive and doesnt last) I use homemade almond milk.

I agree with Stephanie. I cold-brew my coffee and don't need sweetener in it. When I have hot coffee or hot-brewed coffee over ice, I need sweetener.

1/3 C coarse coffee grounds (I like buying the flavored beans) 1 1/2 C water

Stir the grounds into the water and let sit overnight (10-12 hours), then strain in the morning and pour over ice. I add just a splash of heavy cream and viola! awesome iced coffee.

Forgot to add, mix 1/2 C of the cold-brewed coffee with 1/2 C water and add ice. One batch as described above lasts me 3 days, and that's the largest I can make because I'm making it in one of these: teavana.com/tea-products/tea-makers-infusers/p/… – Michelle Aug 11 2011 at 16:52

Hands down the best way to make your ice coffee concentrate is the 12-hour method. Simple as hell and two of my favourite small and ohsoamazing coffee places use this method. It's aces all around. I brew, filter, then store in my fridge in glass flip top bottles:

  • 1lb coarse ground coffee - I use dark roast
  • 2.5q cold water
  • Add coffee then water to a big stock pot and stir with a wooden spoon
  • Cover and let sit at room temperature for 12 hours
  • Filter through a sieve or a Melita + coffee filter into a big sealable jar

When it's time to drink you will use 1/4c concentrate, 3/4c milk and ice.

If you want to try less quantity, here is a smaller breakdown for 1-1/2 of the concentrate:

1 cup coffee medium ground and 2 cups cold water, then follow the same instructions. If you have a French Press this quantity is perfect to make in there.

Enjoy!

How to make a Paleo Iced Coffee Drink:

  • Journey to South America with the rest of your clan
  • Find a coffee plant and lay the beans out to roast in the hot sun
  • Grind the beans with some rocks and then wrap the ground beans in banana leaves
  • Travel back up to North America during the winter
  • Locate a lake frozen over
  • Chip of some ice and break it up into small chunks
  • Heat some water over a fire and brew coffee
  • Add ice
  • Tada! Paleo Iced Coffee.

;)

the sun isn't hot enough to roast the beans, only hot enough to dry them. You can roast them over a fire, but I use an electric heat gun. While I'm at it, since Coffee originated in Ethiopia, a true paleo would go to Africa. – mth Sep 25 2011 at 12:03

My zucchini frappuchino:

12 coffee ice cubes

1 small-medium zucchini

Cold coffee and/or coconut/almond milk

Sweetener and/or flavoring to taste

Cut zucchini up into chunks, and blend with just enough liquid so that the blender will function. Add some sweetener and/or flavoring. Add ice cubes, and blend just long enough to get a slushy consistency.

Sounds odd, but the zucchini helps with the creaminess, while not adding a lot of flavor. It's a bit on the green-tasting side, but a bit of sweetener makes it pleasant. If it really bothers you, try peeling the zucchini first.

(I suppose you could do the same thing with more milk and no zucchini with similar results)

Wow. Never thought of putting zucchini in coffee. How did you come up with this? – Shari Bambino Aug 12 2011 at 0:45
Lots and lots of zucchini in our garden right now. First I tried using it as an ice cream base, and that worked so well I decided to try it with coffee. – jess6 Aug 12 2011 at 14:23

I brew my coffee in the french press. I throw a couple of sugar cubes into a pitcher and pour the warm coffee over them and put it in the fridge overnight. When I want iced coffee I pour the chilled coffee into a thermos cup and top it off with organic heavy cream. It stays cold and yummy for hours.

Brew some Earl Grey tea. Cool it in the fridge.

In a pint glass, pour half tea, and half pure pastured heavy cream. Shake it, add ice. Enjoy.

well if you are going to drink it anyways you might as well enjoy it!!

Some sacrifices have to be made along the line so if you choose coffee, make it really yummy!!

Coffee + coconut milk or cream + pure vanilla!!

Oooh why haven't I thought of adding vanilla? I toss cinnamon in, but somehow vanilla escaped me. Trying this tomorrow morning! – Michelle Aug 11 2011 at 16:49
I'm a total vanilla freak from the flavoring to candles, creams, lip gloss and body oils! dip me in some 'nailla please!!! :) – Kelly Aug 12 2011 at 17:34

Cold-brewed coffee + ice cubes + whipping cream + splash of vanilla = awesome.

I brew some lovely Eithiopian Moka Harrar in my French Press, add either raw milk or heavy cream (which is sadly pasteurized until I can find a better source), and enjoy without sweetener. If I do want it sweeter, then stevia is the way to go.

I can't live without coffee. Or, I can, and did for 6 weeks, but I like it too much to really give up. It doesn't cause me enough issue for me to strike it out.

coffee + ice + a little coconut milk + a little coconut oil + RAW honey + blender = delicious. :]

sometimes i add a few blue or goji berries into the mix and its delish (if youre willing to go higher on carbs/sugar)...this would be my "cheat"
