I like melting cheese on top of potatoes. So good. Add some bacon, salt, and pepper and you have my favorite meal right there.
I also like putting it on top of roastd cauliflower or broccoli.
Cheese goes great with eggs.
Bleu cheese, carmelized onions, and mushrooms is a great combination to put on top of steak.

Where to start... one thing really fabulous that we like (before this month of Whole 30 of course) is Mexican frying cheese. You slice it and fry it right in the pan, no breading or anything necessary. I like it sprinkled with espelette pepper and salt, or cumin and salt, and a squeeze of lime.
Last night I took some GF butter and warmed it, then added a slice of provolone, some mild and Sharp cheddar, and a little parmesan cheeses on top. Fry until it starts to crisp on the bottom, then enjoy.
