So they are having a team meeting at work over lunch that will feature an appetizer potluck. Of course someone else has already claimed deviled eggs, so I am sort of at a lost as to what I can bring for my contribution. I need something not TOO pricey (thought about shrimp, but ...) that will also be somewhat filling in case this and the eggs end up to be the only things I can eat! So far the list also has chickpea dip (nope), buffalo wings (nope), and crackers w/dip (nope).

And I will admit that I am trying for something a little more impressive than a veggie tray w/dip since they all already think I eat all wrong (haven't been eating this way long enough to lose enough weight to prove my weirdness works). I was thinking maybe spiced almonds? Any help will be gratefully accepted!

Karen, Kebabs are tough because of refrigeration and heating issues, but I will definitely consider the kale chips. Those might blow a couple of minds! – JCB Jun 10 2010 at 18:48

You could try this chicken clafouti recipe from MDA. I tried it out last week and it is pretty ridiculous.

You could also make a sweet version with fruit instead of chicken/curry powder. If that would better suit the office crowd.

Bacon-wrapped jalepenos stuffed with cream cheese are always a crowd-pleaser. And buffalo wing recipes are easily adapted to paleo. (Use chicken thighs instead of wings -- more meat and more fat!)

Thanks, I know those are popular with a lot of people and would probably go over well, but ... I should have been more clear about REALLY not liking peppers and hot stuff - that's why the buffalo wings someone else is bringing get a "nope" from me, too. <grin> – JCB Jun 10 2010 at 22:51
